Roasted Garlic & White Bean Soup
With Homemade Sourdough Croutons
Serves 12
Ingredients
ROASTED GARLIC
- 2 heads Garlic
- 1 tbsp Olive Oil
SOUP BASE
- 1 cup chopped Carrots
- 1 cup chopped Celery
- 2 tbsp Rosemary
- 1 head Pre-Roasted Garlic (see instructions on how to roast)
- Pinch of Sea Salt & Pepper
- 1 qt. Vegetable Broth
- 2 cans White Beans (or 1 cup dried soaked & cooked)
CROUTONS
- 1 head Pre-Roasted Garlic (see instructions on how to roast)
- 6 slices SourDough Bread
- 1 tbsp Olive Oil

Seasonings: Rosemary, Sea Salt and Pepper
Instructions
ROASTED GARLIC
- Preheat your oven to 375 F
- Chop the top and bottom of the heads of Garlic then place them in a baking dish or pot with a lid.
- Drizzle the chopped garlic heads with olive oil.
- Put the lid over your baking dish and place it in the oven to bake for 20-30 minutes, until the garlic looks golden brown and feels tender
SOUP BASE
- Pre-heat a large pot with a lid on the stove to medium heat.
- Chop the Carrot and Celery and add them to your preheat pot.
- Let cook for 10 minutes or until fragrant.
- Add all the cloves of 1 head of the Roasted Garlic, Rosemary, and Sea Salt and Pepper.
- Infuse together for 3 - 5 minutes, then add the Vegetable Broth.
- Bring to a boil and then reduce to a simmer.
- Simmer for 10 minutes - 45 minutes. However infused you want it.
CROUTONS
- Preheat your oven to 375 F
- Add all the cloves of 1 head of the Roasted Garlic into a small bowl. Cover with Olive Oil, Rosemary Sea Salt and Pepper.
- Cut the slices of Sourdough into cubes and spread them across a baking dish.
- Drizzle the Roasted Garlic, Olive Oil, and Seasonings mixture on top of the cubed Sourdough.
- Put the dish in the oven to bake for 10-15 minutes or until they are golden and crispy.
- Set aside until you are ready to serve your soup.
