Chocolate Veggie Donuts
A Plant-Based Treat with a Sweet Secret

These veggie-packed chocolate donuts are soft, rich, and kid-approved, yet full of nourishing ingredients like spinach, carrots, zucchini, and banana. They bake up beautifully in a donut or muffin pan and work as a breakfast, snack, or dessert.
Makes 12 Donuts
Ingredients
BLEND
- 1 cup Baby Carrots
- 1 chopped Zucchini
- 1 cup Spinach
- 1 Banana
- 2 Eggs
- ¼ cup Coconut Milk
- ¼ cup Avocado Oil
- ⅓ cup Honey or Maple Syrup
- 1 tsp Vanilla
DRY
- 1 ½ cup Oat Flour or GF Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- ⅓ cup Cocoa Powder
- ¼ tsp Sea Salt
- ¼ cup Dark Chocolate Chips
DRIZZLE

1 cup Dark Chocolate Chips (optional, but appreciated)
Instructions

Set oven to preheat at 350F
BLEND
- Add baby carrots, zucchini, spinach, banana, avocado oil, milk, maple syrup and vanilla to a blender and blend until smooth.
- Set aside and prepare your dry ingredients.
DRY
- Add flour, baking soda, and baking powder to a bowl and mix thoroughly.
- Add cocoa powder and sea salt and mix thoroughly.
BAKING
- Stir together the blended ingredients and the dry ingredients until completely incorporated then fold in the dark chocolate chips.
- Oil the inside of the donut or muffin mold with a little avocado oil.
- Spoon the donut mixture into the molds.
- Bake for 20 minutes or until the donuts come clean with a toothpick test.
